Yields: About 24 cookies
Prep Time: 15 minutes
Chill Time: 30 minutes (optional, but recommended)
Cook Time: 10-12 minutes

Ingredients

  • 1 cup 2 sticks unsalted butter, softened
  • 1 cup dark brown sugar packed
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 ½ teaspoons vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • 3 cups old-fashioned rolled oats
  • 1 cup raisins soaked in warm water for 10 minutes, then drained
  • ½ cup chopped walnuts optional

Instructions

Preheat & Prep:

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

If your raisins are dry, soak them in warm water for 10 minutes, then drain and pat dry.

    Cream Butter & Sugars:

    • In a large mixing bowl, beat the butter, brown sugar, and granulated sugar together until light and fluffy (about 2 minutes).
    • Add in the eggs one at a time, beating well after each addition.
    • Stir in the vanilla extract.

    Mix Dry Ingredients:

    • In a separate bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.

    Combine Wet & Dry Ingredients:

    • Gradually mix the dry ingredients into the wet mixture until just combined.
    • Stir in the oats, raisins, and walnuts (if using).

(Optional: Chill the dough for 30 minutes to prevent spreading and enhance the chewiness.)

      Scoop & Bake:

      • Drop rounded tablespoonfuls of dough onto the prepared baking sheet, spacing them 2 inches apart.
      • Bake for 10-12 minutes, or until the edges are golden but the centers look slightly underbaked.

      Cool & Enjoy:

Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

Tips for the Best Oatmeal Raisin Cookies:
✔ For extra chewy cookies, replace ¼ cup of granulated sugar with honey or maple syrup.
✔ For bakery-style thickness, chill the dough for at least 30 minutes before baking.
✔ For softer raisins, always soak them in warm water before using.
